BONNAROO PACKING GUIDE

Bonnaroo will be here before we know it so I thought I'd share my personal packing list for that I created specifically for Bonnaroo, enjoy!

Hygiene:

Toilet paper, its just not fun to realize the port-a-potty ran out

Lemon Chicken Soup

Here is my version of Avgolemono or Greek Lemon Chicken Soup.  This soup is so quick and easy!  The eggs make it creamy (think custard) without adding dairy.  It makes a great light lunch or dinner.  It can also be served as a first course.


Serves 4

Ingredients:
  • 4 cups reduced sodium chicken broth
  • 1 cup cooked shredded chicken
  • 1/2 cup orzo pasta
  • juice of 1 large lemon
  • 2 eggs + 1 egg yolk
  • salt and pepper to taste
In a medium sized pot, bring chicken stock to a boil.
Add orzo, boil 8 minutes stirring occasionally, then stir in shredded chicken.
Meanwhile, whisk eggs in a separate bowl until well beaten, then whisk lemon juice into the eggs.
Remove pot from heat, temper egg mixture with the chicken stock mix until you have added about 1 cup of broth to the eggs.
Whisk egg mixture into the soup, season with salt and pepper.
Serve immediately.

Tip: I like buy chicken on sale and cook a large amount in the crock pot.  I then shred it, let in soak in its stock for a few minutes, then freeze it in small portions.  This way I have shredded chicken on hand.

DIY Honeysuckle Napkin Rings & Pretty Handmade Napkins

Today I thrifted a set of pretty handmade napkins.  A complete set of 8 in near perfect condition.
I decided to make some simple napkin rings to compliment my find.  The napkins are already bold so I wanted something simple to pair them with.


I used dead Japanese honeysuckle from my yard to form simple wreath like rings.  I chose this vine because of my honeysuckle problem but any woody vine would work. I decided to embellish the ring with small floral pieces but I also like the simplicity of the bare rings.
